Their history, their cuisine
Laetitia manages the dining room while Thomas runs the kitchen.
Young and dynamic, trained in the region at the Michelin-starred La Pyramide and Domaine de Clairefontaine. They then worked for a few years in Lyon at Le 9ème Art.
In 2022, they decided to settle in Condrieu and opened their own restaurant, Comptoir 1940, in a nod to the creation date of the Condrieu AOC.

This dish features trout that has been preserved for several hours in a citrus reduction. It is then seasoned with a few condiments, lime zest and citrus juice.
The fatness and bitterness of the fish, enhanced by the acidity of the citrus fruit, make a wonderful match for the Condrieu Vernon 21. A full-bodied, racy wine with floral and citrus notes Beautiful tension and noble bitters on the finish.
